Neil Perry x Qantas: First Class pavlova

RECIPE
PAVLOVA IN A GLASS WITH RASPBERRY, STRAWBERRY AND PASSIONFRUIT
Makes 4-6 serves

This is very much a seasonal dessert where best quality fruit can be chosen depending on seasonality and availability.

MERINGUES
160g egg whites (from four large eggs)
1 cup caster sugar
1cup icing sugar
1 tbsp. freeze dried raspberry powder (if using)

PREPARATION
Pre-heat oven to 90°C, ensuring the fan is off.
For the raspberry meringue, whisk the egg whites until you form soft peaks. Gradually add caster sugar and continue to whisk until the sugar has dissolved. Sift icing sugar and raspberry powder combined over the egg whites and fold gently to combine. Fill piping bag with meringue mixture and pipe 3cm meringues onto baking paper lined baking trays. Bake for 40 minutes or until set but not coloured. Turn oven off, leave door ajar and allow meringues to cool for at least 15 minutes. Remove from oven, cool completely and store in an airtight container until ready to use.


MASCARPONE CREAM
1 cup mascarpone
2 tbsp. caster sugar
½ vanilla bean, seeds scraped
2 no. egg whites
2 tbsp. caster sugar, extra

PREPARATION
For the mascarpone cream, using a spatula, very gently mix the mascarpone, caster sugar and vanilla seeds together to just combine.
In a separate bowl, whisk the egg whites until you form soft peaks. Gradually add caster sugar and continue to whisk until sugar has dissolved and you have a thick meringue-like mix.
Fold the egg white mixture through the mascarpone mixture in several batches, until just combined. Cover and refrigerate until ready to use.

Raspberries and strawberries (strawberries hulled and quartered)
Passionfruit (halved, pulp and seeds scooped out)
Meringues
Mascarpone cream
Ice cream or sorbet (vanilla/passionfruit/berry etc)
Freeze-dried raspberries or strawberries (can be purchased from speciality food stores.)
Vanilla Pashmak (traditional handspun Persian sweet that is similar to fairy floss and can be purchased from speciality food stores)

SINGLE SERVE ASSEMBLY
Layer ingredients as per below in a serving glass and serve immediately.

1 spoon mascarpone cream
fresh raspberries and strawberries
1 spoon passionfruit gelato or vanilla ice cream
1 meringue
2 crumbled freeze-dried raspberries or strawberries - can be purchased from speciality food stores.
1 spoon fresh passionfruit pulp (with seeds)
1 spoon mascarpone cream
1 meringue
fresh raspberries and strawberries
1 spoon fresh passionfruit pulp (with seeds)
1 spoon mascarpone cream
Pinch of vanilla pashmak
